India ~ Breakfast ~ Masala Aloo

Masala Aloo

Original Recipe
Ingredients
Serves 4
3 large potatoes
1/2 medium red onion chopped
2 green chillies, seeded and chopped
I medium tomato
1/2 teaspoon garlic paste
1/2 teaspoon ginger paste
1/2 teaspoon turmeric powder 
to taste salt 
1 teaspoon Mustard seeds
8-10 curry leaves (fresh or dry)
2 tablespoons vegetable oil 
Preparation 
prep time 10 mins/cook time 10 mins
1. Peel and cube the potatoes into roughly half inch cubes. Cover with water and cook in Microwave for 5-6 mins. Drain.
2. Heat oil in a pan, When oil is smoking add mustard seeds and allow to splatter. (keep covered) Then add chopped onions, chillies and coriander leaves. Fry till onions turn transparent. Add ginger and garlic paste, turmeric and stir for 1-2 mins. Add potatoes and salt to taste. Cover and cook for 5-6 mins, stirring once or twice. Add tomatoes and peas and cook for a few more minutes until peas are soft. Mix well.
3. Serve hot with chapatis/parathas or other flat bread.

Don't Panic if you don't have all the ingredients! 
This is an easy and versatile dish and you can switch it up as needed and to your personal taste.
Here is what I did differently:
I had forgotten to buy red onions so I used whatever onion I had on hand. 
I did not use green chillies and instead used a bit of chilli powder to taste.
I had no mustard seeds, however I did have mustard powder, so I fudged it.
I have no idea where to find curry leaves yet, however I had curry powder, so it worked.
You can use garlic and ginger powder or fresh garlic and ginger should you need to.
I do not like peas, so we did not put those in.
I know,.. way to stay authentic huh! lol

My families reaction to the meal:
My oldest son loved it, in fact he wished that I had made it even hotter
My youngest son was not impressed at all, saying there was too much onion, too hot and was not sure this was breakfast food.
I wished that the potatoes were not so soft and mushy, next time I will try frying them a bit more to get some crust on them before adding them to the onions.

My house still smells strongly of spice and just that small amount of Masala Aloo was enough to last well into the afternoon.
