(Pancakes)
You might be thinking, wow Danielle you sure like breakfast, and in all honesty you would be 100% right! Mornings are nice. I wake up before my kids do, I let out my gaggle of canines who then settle back down if I want to have some quiet time to myself, and it is nice to wake everyone up with the smell of a hearty meal where we all sit down and eat before we begin the day. How was that for a run on sentence?
For some of you, mornings may mean a mad dash from the shower out the door to drop kids off at school, go to work or really any number of errands that we need to prepare for once we wake up. Breakfast, by no means, can only be served in the morning.
Having a very warm September that often resulted in using the air conditioner or by very least a fan, was a big inspiration to trying to keep my appliances off later in the day.
I got this Recipe (like many others) from the Blog called Russian Bites. You can find the original recipe HERE
- 1 cup heavy whipping cream
- 1 egg
- a pinch of sugar (or more to taste… I like them to be on a slightly savory side so I can sweeten them with toppings)
- a pinch of salt
- 1/2 c all-purpose flour
Preferably let stand for 15-30 minutes. This step is not necessary, though, if you’re in a hurry… or especially hungry
Cook like pancakes! I used a 1/4 cup measuring scoop to make them somewhat uniform.
Cook over medium heat; flip when the edges brown (just a few minutes).
The most traditional toppings include sweetened condensed milk, sour cream and jam.
What I did differently
Nothing, lets here it for having all the ingredients on hand or easily found in the local corner store or market.
My families reaction
We all tried using sweetened condensed milk on these where in the past we were hesitant. My kids found them richer and more filling then traditional pancakes but it was unanimous that they were good! We may make these again when it is winter and I want my kids to have a great start to a cold day.
