India ~ Dinner ~ Beetroot Broccoli Curry

Beetroot Broccoli Curry

I had purchased a few Beetroots for a dish I had found online that looked interesting yet when I got around to actually using them, I could not find the recipe for the life of me! A desperate search for any recipe with Beets that could be used with India month led me to very few choices indeed. The recipe I found and used is on a site that does not really provide anything I could copy and paste so I will give you the link to check it out yourself.

I think this website is great and would love to add it to our Wonderful List of Links however, the recipes do not come with an easy to print ingredient and instructions list to have with you in the kitchen for reference and even though they provide a step to step guide with photos on how to cook it, lacking that one thing makes actually cooking the recipes away from your computer very hard to do. 
I tried printing it out however I was not about to use 13 pages of black and color ink to have the recipe in hand in the kitchen. 

What I did Differently
I did not do too much differently. I had about all the ingredients on hand.

My Family's Reaction
My daughter, who is a very, very picky eater, turned her nose up at it as soon as I showed her what a Beetroot looked like. Watching me chop it did little for the cause. She ate the bread and some raw broccoli. 
My sons tried it, commenting that it tasted FAR better then it looked or smelled. It is not something that I will get the request to make again I am sure, however beetroot and broccoli are so good for you that they had a meal packed full of vitamins and nutrition and as a mother, that is all I can ask for.
